What I Eat In A Week: Vegan Edition

I recently wrote a blog post on ‘what I eat in a week’, however, I’m now on a vegan diet to try and lose weight, so I thought I’d share my meals with you!

I was on a pescatarian diet (with an occasional bit of chicken here and there), however I feel that going completely plant based will help me shift the pounds. I ordered Bosh’s healthy vegan diet book and have been trying lots of yummy recipes from there.

So without further a do, here’s what I’ve been eating:

Monday

On Monday, we had a special delivery from Dishoom – we tried their vegan sausage naans and they were delicious, highly recommend. For dinner we had vegan saag ‘paneer’ which was tofu. For dessert I made a cherry crumble and oh my it was so good.

Tuesday

I started the day with a mixed berry and oat milk smoothie followed by leek and potato soup for lunch. Curry cauliflower with spring onions and lime with mixed leaf salad for dinner. Super healthy day!

Wednesday

I skipped breakfast and ate hummus, cucumber, cherry tomatoes and red onion on toast for lunch, followed by a ‘meaty’ (veggie mince) and mushroom filo pastry pie with honey roasted carrots for dinner. As a treat I made banana flapjacks, may have had a couple of these, oops.

Thursday

On Thursday I skipped breakfast and had hummus and cucumber on toast for lunch followed by a vegan stir fry with udon noodles. I also made oat and peanut butter balls as a snack!

Friday

On Friday I had avocado and chilli flakes on an english muffin, bean, tomato and vegan cheese wraps for lunch and vegan Patty & Bun burger for dinner.

Saturday

I skipped breakfast and had vegan scones with jam as a snack followed by thai jackfruit and potato ‘fish’ cakes for lunch. For dinner I had BBQ portobello mushrooms and potato, spring onions and chickpea salad.

Sunday

I missed breakfast once again, oops. But look at that healthy salad lasagne lunch goodness – made with asparagus, mint, broccoli, peas, vegan cheese, pasta sheets and vegan creamy sauce. We also had a vegan roast dinner, mushroom filo pastry parcels with roasted carrots, parsnips, potatoes and sprouts.

So there’s one week of my ‘vegan’ food diaries. I’d love to know what vegan recipes you’d recommend. We love the ‘so vegan’ and ‘bosh’ cookbooks. So many great recipes to try.

    Oh wow everything looks so good! I am not vegan but there are some days I want to eat meat free and this post would be great to look back on for ideas! Thanks so much for sharing!
